1 cup corn meal
2 tbsp sugar (optional)
½ tsp sage or poultry seasoning
1 cup milk
¼ cup vegetable oil
½ cup sliced celery
1 cup all-purpose flour
4 tsp baking powder
½ tsp salt (optional)
2 eggs
1 medium tomato, seeded, chopped
½ cup sliced green onions


Heat oven to 425 degrees. Grease 8 or 9 inch square baking pan. Combine dry ingredients; add milk, eggs and oil. Beat about 1 minute or until smooth. Fold in vegetables. Pour into prepared pan. Bake 20 to 25 minutes until golden brown.
