Southern Made
Peanut Brittle
1 cup
sugar
1/2 cup Steen's Southern Made Syrup
1 tsp. vanilla
1 cup roasted, salted peanuts
1 tsp. butter
1 tsp. baking soda
In a 11/2 quart casserole dish stir
together the sugar and syrup and microwave on high for 4
minutes. Next, stir in peanuts, and microwave on high for
approximately 4 minutes (until light brown). Add butter
and vanilla to syrup, blending well. Microwave 1 to 2
minutes more. Peanuts will be light brown and syrup will
be very hot. Add baking soda and gently stir until light
and foamy. Pour mixture onto lightly greased cookie
sheet. Let cool for a half hour (at least). When cool,
break into small pieces and store in air-tight container.
